I tried this recipe from a magazine, it became a favorite real fast and was enjoyed by 3 guest-Cindy,Hendrik and Cheryl.
6 Tbsp, Plus 1 cup sugar
4 Tbsp flour
Perfect Pie Dough ( see recipe below)
3lbs crisp apples ie: Granny Smith or Braeburn
Juice of 1 lemon
1 tsp cinnamon, more for garnish (optional)
1/2 tsp fresh grated nutmeg ( don't have?, use ground nutmeg, i did)
1/4 tsp salt
3 Tbsp butter ( i use Becel Margarine in all my recipes that call for butter)
Preheat oven to 400
sift 6 Tbsp sugar with 3 Tbsp flour, dust work surface with mixture. roll out the dough to 1/8 in thick. Cust into cookies , any shape, i don't have cookie cutter, i used a glass. transfer to cookie sheet lined with wax paper. Chill for 20 mins. Bake for 8-10 mins.
Meanwhile , peel, core and slice apples into 1/4 in thick pieces, toss with lemon juice. In a medium size bowl, combine remaining sugar and flour,cinnamon,nutmeg, and salt, set aside.
Heat butter in a large sauce pan over high heat until it sizzles, about 1 min. add apples and cook until softened slightly, tossing occasionally, for 8-10 mins.sprinkle in sugar mixture, mix, and let come to a boil. cook until apples are tender, 4 to mins. Transfer to a compote dish-Ramekin, or soup bowel with a handle, serve with the cooked cookie doug. I also topped it off with a scoop of Vanilla Bean Ice Cream rolled in cinnamon.
Cookie Doug Recipe
2 cups flour
2 Tsbp sugar
1/2 tsp salt
12 Tbsp unsalted butter cut into small pieces
1/2 tsp Vanilla
Stir together flour and sugar and salt in large bowl.
Use a fork to cut in butter until mixture resembles coarse meal, pea size bit of butter throughout.
drizzle in 1 to 2 Tbsp of ice water at a time up to 6 tbsp in total, tossing after each addition, using only enuf water to make dough clump together. Pat dough into a 4 in circle, tightly cover with plastic wrap and chill for 30 mins. roll out like you would a pie crust and use cookie cutter or glass to cut out cookies. Bake at 400 deg for 8-10 mins. Serve with the apple compote. This will impress your guest with a warm taste of delicious apple compote, and the overall presentation will impress also. Remember i topped it off with a scoop of vanilla bean ice cream tossed in cinnamon and the cookie. Yummy in the tummy on a cold winter night. give it a try and enjoy.
